The words ‘cheesecake’ and ‘healthy’ generally don’t go too well together yet this recipe is loaded full of delicious ingredients which not only taste great, but are also packed full of nutrients and healthy properties.

A perfect sugar-free low carb treat.

Prepare a springform pan with parchment paper.

Add almond flour, erythritrol, and lemon zest.

Mix in butter.

Mold with your hands.

Press into the springform pan.

Place sauce ingredients in a saucepan.

Crush berries and stir over medium heat.

Meanwhile, beat cream cheese.

Add vanilla and erythritrol.

Fold in blueberry sauce.

After whipping heavy cream, fold it into the cheesecake mixture.

Add to pan and chill

So creamy and decadent.. Fresh or frozen berries work perfectly with this recipe.

The tartness and sweetness of the berries cut through the richness of the ice cream or frozen yoghurt, complimenting each other beautifully.
