Keto Chicken Salad

Try this easy keto chicken salad recipe that's great as a hearty lunch or quick weeknight dinner. Serve with cheese crisps or low carb bread!

Ingredients

  • 3 cups chicken chopped
  • 12 oz package of bacon cooked and crumbled
  • 2 avocados diced
  • 1 cup cheddar cheese shredded
  • 3 scallions sliced thinly
  • 2 celery stalks diced
  • ½ cup Caesar dressing
  • 1 tsp salt
  • ½ tsp ground black pepper

Instructions

  • Combine the chicken, bacon, avocados, scallions, and celery in a large bowl.
  • In a small bowl, whisk together the Caesar dressing, salt, and pepper and pour over the vegetables. Toss to coat all of the vegetables in the dressing.
  • Add the shredded cheddar cheese and stir to combine.
  • Serve immediately.

Notes:
You can easily make this recipe Keto by using a Keto-friendly Caesar dressing, or one with a yogurt base and no added sugars.
Save the hassle of having to cook the chicken and use any leftover chicken you already have or buy a rotisserie style chicken and chop that.
If making this salad ahead of time, wait to add the avocado until just before serving to prevent it from turning brown.
